Cherry Dessert (cookie cups)

The sale of cherry pies was a staple of VEISHEA and are currently sold during Human Sciences Week, but why not bring them back for Homecoming? Try some of these cherry pie inspired desserts during Iowa State’s 105th homecoming week. 

Cherry Pie Cookie Cups 

1 16 1/2 ounce roll refrigerated sugar cookie dough

1/4 cup sugar

1 cup cherry pie filling

1 cup powdered sugar

1/4 cup heavy whipping cream

1 teaspoon vanilla extract 

Heat oven to 350°F and spray mini muffin pan with non-stick cooking spray. Divide cookie dough in half and cut half into 12 slices. Roll each slice into a ball. Roll ball into sugar and place into mini muffin pan. Bake for 10 to 12 minutes. Remove from oven. Gently press down the center of each cookie with a spoon, creating an indentation. Fill each cookie with one tablespoon of cherry pie filling. Combine confectioners sugar, cream and vanilla extract until smooth. Return to oven, bake an additional three to five minutes. Cool for five minutes. Drizzle glaze over cookies.

Mini Cherry Cheesecakes

24 Nilla Wafers

2 8 ounce sticks cream cheese, softened 

2 large eggs

3/4 cup sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 can chilled cherry pie filling

Heat oven to 350°F. Line muffin tins with liners. Place one wafer in each of the cupcake papers. Mix softened cream cheese and sugar in a large bowl until smooth. Mix in one egg at a time. Mix in lemon juice and vanilla extract. Fill cupcake liners with cream cheese mixture until 3/4 full. Bake for 12 to 15 minutes. Cool for five minutes. Top each cheesecake with one tablespoon of cherry pie filling.

Easy Cherry Turnovers

2 cans store-bought crescent rolls

1 cup cherry pie filling

1 cup confectioners sugar

1/4 cup heavy whipping cream

1 teaspoon vanilla extract

Heat oven to 375°F. Line baking sheet with parchment paper and separate crescent roll dough into triangles. Place one tablespoon of cherry pie filling at the base of triangle and gently roll up. Bake 10 to 12 minutes. While turnovers are baking, prepare glaze. Combine confectioners sugar, cream and vanilla extract until smooth. Pour glaze over hot turnovers.
