Construction crews said the new Fighting Burrito location at 117 Welch Ave. is scheduled to open Friday despite the city of Ames asking restaurants to close voluntarily due to water shortages.

Restaurants that choose to stay open during this time are required to follow several guidelines from the Iowa Department of Inspections and Appeals for safe water practices. These guidelines include using bottled water for serving drinking water or mixed drinks, washing hands, washing and preparing food, and using single-service paper plates, utensils and cups.

Once the boil water advisory is lifted, restaurants must clean and sanitize all dispensing machines that are hooked up to the water line before use.

Fighting Burrito owner Matthew Goodman was not available for comment.
