‘Vegetarian friendly’ nomination puzzles university

Since PETA2 put Iowa State on the recognition list for being “vegetarian friendly,” students and staff have been buzzing about the seemingly bizarre nomination, given the university’s acclaimed meat science program.
The misunderstanding, caused by a relay of incorrect information, left a wrong impression of why Iowa State was being awarded.
The list awards colleges whose dining halls provide vegan and vegetarian options at every meal. ISU Dining’s vegan and vegetarian options include black bean quesadillas, pasta selections and both soy and rice milk.
“We get our ideas from the Food Network and trade magazines, like everyone else,” said Carol Petersen, assistant director for Campus Dining Services.
This fall, a vegetarian version of the chicken nugget was introduced.
“It was well received,” Petersen said. “We like to have our students – vegetarians and not – try our new products for acceptance before we add them to the menu.”
ISU Dining directors attempt to cater to those with vegetarian preferences.
“I think its always in the forefront of our meal planning, and made-to-order cooking makes it easier for vegetarians or vegans to make adjustments,” said Mary Ellen Metzger, Maple-Willow-Larch dining manager.
The ISU Dining directors meet with neighboring colleges that possess a greater degree of vegans and vegetarians in their student populations.
Colleges and universities were selected for a chance at the title of “Vegan Valedictorian” through student nominations and online dining information. The winner will be announced in November.
In the United States, 4.8 million adults report never eating meat, poultry and fish. Studies show vegetarians tend to be more physically active, fit and have lower rates of substance abuse and heart disease. Doctors attribute vegetarians’ lower blood pressure and cholesterol levels to their increased intake of fruits and vegetables.
Religious beliefs, animal rights and environmental conservation are just a few of the reasons people choose to lead a vegetarian lifestyle.
