Block and Bridle club selling holiday sausage

For the last 25 years, Iowa State’s Block and Bridle Club has produced and sold summer sausage for the holiday season.

The club produced 4,000 pounds of sausage in the ISU Meat Lab. After one day of processing, the product fermented, smoked, cooked, chilled and was packaged in three days.

Joe Sebranek, professor of animal science, said students learn about the product’s production and the U.S. Department of Agriculture’s inspection requirements.

He said the sausage showcases ISU the people who receive the product.

“It gives students a chance to utilize the Meat Lab,” Sebranek said. “It shows people that we’re capable of world class meat processing.”

People can pick up the sausage packages as gifts before they leave for winter break, Shannon Brinning, junior in animal science, said. In between classes in the foyer of Kildee, students volunteer their time to sell the products.

There are five different combinations of packages with prices ranging from $9 to $13.

“We’re off to a good start, but we have plenty left,” Brinning said.

This is the club’s largest fundraiser and the money will go toward the club’s activities throughout the year.
