Need to Know: Three (or four) square meals: food to prep in the dorms

Making an omelet inside of a coffee mug can be an incredibly simple recipe for a college dorm or apartment.

While eating in the dining halls is convenient and free, sometimes it’s nice to make food in the comfort of your own dorm or apartment. Here are a few breakfast, lunch, dinner and dessert recipes that can be prepared in either a dorm room or an apartment kitchen. 

Breakfast: Microwave Egg Frittata

Prep time: 6 minutes

2 eggs

1/4 cup fat-free evaporated milk

1/2 cup spinach leaves

1 tomato

1-2 slices turkey bacon

1/3 cup shredded mozzarella cheese

Salt and pepper (to taste)

Wash and dry the spinach, then tear it into small pieces. Place leaves into the bottom of a bowl. Dice tomato and throw it in a bowl along with diced turkey bacon. 

Beat the eggs and milk in a separate bowl and pour over the spinach, tomato and turkey bacon at the bottom of the bowl. Sprinkle with salt and pepper, and microwave for three minutes.

Lunch: Crunchy Peanut Butter Wraps

Prep time: 15 minutes

1/3 cup peanut butter

1 cup chopped apple (recipe calls for granny smith, but any kind would be fine)

1/4 cup granola

Flour tortillas

Spread peanut butter over tortilla. If you wish, microwave for 10 to 15 seconds. Sprinkle tortilla with chopped apple and granola. Roll up tortillas and cut in half.

Dinner: Microwave Macaroni and Cheese

Prep time: 15 minutes

1/2 cup macaroni

1/2 cup water

1/2 tsp salt

1/4 cup milk

1/2 cup shredded cheese (recipe calls for cheddar, but any kind would work). 

In a microwave safe bowl, combine the macaroni, water and salt. Microwave on high at two minute intervals. Stir between each interval. In total, the macaroni should be cooked for between 6 to 8 minutes. 

Stir in milk and cheese. Microwave at 30 second intervals until the cheese has become a creamy sauce (about 1 to 1 1/2 minutes).

Dessert: Eggless Microwave Chocolate Cake

Prep time: 4 minutes

3 tbsp all-purpose flour

3 tbsp unsweetened cocoa powder

3 tbsp vegetable oil

3 tbsp milk (or water, either is fine)

2 tbsp granulated sugar

1 tbsp brown sugar (or 1 tbsp granulated sugar)

1/8 tsp baking powder

Pinch of salt

Mix dry ingredients in a microwave-safe mug, then add wet ingredients and mix until smooth. Microwave for two minutes, let sit and microwave for an additional 30 seconds. Serve plain, with powdered sugar or vanilla ice cream.
