Two-Ingredient Banana Pancakes

Step outside of your comfort zone, and try out this two-ingredient pancake recipe. This simple replacement to your traditional pancake recipe just might become your new favorite, easy, morning breakfast.
Serves: 2
Ingredients:
2 eggs
1 banana
1 pinch baking powder, optional
Place peeled banana in a bowl and mash well with a fork
Add the eggs and baking powder (if using)
Mix well
Pour half of the batter onto a heated skillet, greased
Cook until underside is golden brown
Flip pancake and repeat on other side
Transfer to plate
Repeat steps with remaining batter
Serve immediately
You can play with this recipe as much as you would like, such as adding a dash of cinnamon, your favorite berries, chocolate chips, or chopped nuts.
