Recipe: Caramel Snack Mix
November 13, 2014
This amazing snack will keep you full for about a week, if you are able to control yourself and your eating habits. If not, well, good luck.
All you need is:
½ cup of butter (which is one stick)
¾ cup of white Karo syrup
1 cup of packed brown sugar
1 box of Chex cereal (rice or corn)
1 cup of almonds (optional)
1 cup of pecans (also optional)
I am poor so I opted out of the almond and pecan part of the recipe, but it is still just as good.
First you need to preheat your oven to 275. Spray a large roasting pan with nonstick spray. In a microwave safe bowl, melt the butter, brown sugar and Karo syrup, about 2 minutes. Put the cereal and the nuts into the pan. When the butter mixture is melted stir well, then pour over the cereal. Mix gently until all of the cereal and nuts are coated with the caramel.
Bake for 1 hour taking it out ever 15 minutes to stir. When it’s done keep stirring so that it doesn’t cool into one big clump.
You have just made the most delicious snack ever. Keep it away from your roommates so that it isn’t gone within five minutes. Enjoy!
