Mug Night: Banana bread style

If you are a little low on funds or if you aren’t 21 yet, you can still participate in mug night! Make some banana bread!
Here is what you need:
• Non-stick cooking spray
• 3 tbs flour
• 1 tbs + 1 teas sugar
• 2 tbs brown sugar
• 1/8 teas salt
• 1/8 teas baking powder
• 1/8 teas baking soda
• 1 egg
• 1/4 teas vanilla extract
• 1 tbs vegetable oil
• 1 tbs milk
1 ripe banana, mashed
First you need to spray your mug with the non stick spray. In the mug- that’s right, just put everything right in there- mix all the dry ingredients, flour, salt, sugar, baking powder and baking soda. Once that is wisked add the egg and combine with the dry ingredients. Then mix in the vanilla, oil, milk and mashed banana.
Microwave this for 3 minutes (I thought it was going to explode in the microwave because it came out of my mug, but don’t worry it shrinks back down) I ended up putting mine in for an extra 30 seconds because I wasn’t sure if it was done and it came out perfect.
This is a delicious snack that will make that homesickness for your moms banana bread subside until you can get the real thing back home for thanksgiving. Or you can teach your mom this recipe that you learned to show your mom you did learn something this semester.
