Recipe: Fajitas

So Margarita Monday needs a food to go with it and what is better than fajitas? I watched my parents make fajitas every week for years and thought that it was something I can only get when I am home but it turns out, its fairly easy to make!
You need:
Chicken, boneless and skinless (I usually do one breast per person)
Fajita seasoning packet
Veggie Oil
Peppers (one green one red)
Onion (I didn’t use this but it adds flavor if you like them)
Tortillas
Cheese and other toppings
First take a baking pan (I use my pyrex 9”x 13”), and mix water, oil, and the packet according to the packet directions. Then cut the chicken into strips and place in the pan flipping to ensure all strips are coated in the mixture. You can do this part earlier in the day and then place in the refrigerator to marinate or you can keep going if you want to eat right away. Also cut up the peppers and onion into strips, they don’t need to be marinated unless you want them to have more flavor.
Next put some oil on the bottom of a frying pan and start to place the chicken strips in the pan. Be careful because once the oil gets hot and starts popping, it can burn your hands, which from personal experience is not fun. Add in some of the veggies while you cook the chicken to give some of the flavor to them.
All that’s left to do is build your fajita! If you have leftover chicken, it tastes great in a salad the next day as well or if you are just feeling another fajita!
