Cheap eats: imitation crab quesadillas

In this week’s installment of “Cheap Eats,” I will walk you through how to make delicious and easy-to-make imitation crab quesadillas. Perfect for when you’re in a time-crunch, this recipe adds a little seafood flair to a classic quick meal. The ingredients for this meal cost under $10 and will make multiple meals. All prices are approximate and prices vary by store and location. 

Ingredients to get from store:

1 lb imitation crab meat: $4

Street taco flour tortillas (12 pack): $2

8 oz bag of shredded cheese of your choice (I use colby jack): $2.50

Total: $8.50

Ingredients for one meal:

2 street taco tortillas

3 oz imitation crab meat

¾ cup of shredded cheese

Preparation:

  1. Weigh out imitation crab. Chop the meat into fine pieces or strips, depending on preference.

  2. Heat pan on medium-high heat. Spray with non-stick spray or place a small amount of butter in the pan. 

  3. Sprinkle half of the cheese evenly over one tortilla. Next, put crab meat on top. Finally, sprinkle the remainder of the cheese on top of the crab. Lay the other tortilla on top. Your quesadilla is ready for the pan.

  4. Place the quesadilla on the pan and allow to sizzle. After one and a half minutes, flip and repeat. Reduce to low-medium heat and let the quesadilla continue to cook. Once each side is lightly browned and the cheese has melted, serve on a plate.

  5. Cut in half and enjoy. Best enjoyed with a hot sauce such as Cholula or Tapatio.
