One of the biggest setbacks when trying to prepare meals in a dorm can be the absence of a stove or oven.

This is where the microwave saves the day.

With a microwaveable safe mug and a little creativity, everything from breakfast dishes, to comfort foods, to desserts can be cooked in the microwave.

Mac & Cheese in a Mug

With five minutes and five ingredients, anyone with access to a microwave can whip up this classic comfort food.

Ingredients:

  • 1/3 cup pasta

  • 3/4 cup cold water

  • 4 tbs milk

  • 1/4 tsp cornstarch

  • 4 tbs grated cheddar cheese

Directions:

  1. Pull out your favorite large microwaveable mug and add the pasta and water.

  2. Microwave about 3 1/2 minutes, or until pasta is fully cooked.

  3. Drain the excess water from the mug.

  4. Add cheese, cornstarch and milk and stir.

  5. Microwave for one more minute and stir a final time.

  6. Season to taste.

 

Microwave Vegetarian Burrito Bowl

This burrito bowl is simple, healthy and requires less prep time than getting in your car and taking a trip to your favorite burrito restaurant.

Ingredients:

  • 1 cup frozen, pre-cooked brown rice

  • 1/2 cup black beans, drained and rinsed

  • 1 tbs plain Greek yogurt

  • 1 tbs shredded cheese

  • 2-3 tbs salsa

  • Desired mix-ins and toppings

Directions:

  1. Prepare brown rice following directions on package

  2. Mix rice, black beans, salsa, yogurt and cheese in a microwaveable mug or bowl.

  3. Microwave 30-60 seconds, or until fully heated

  4. Mix in desired toppings. Fun options include avocado, corn salsa, pico de gallo, roasted vegetables and queso.
