So here is a little recipe that your can use to impress all your family members this Thanksgiving. If your mom asks you to help, tell her you got this side dish covered and use this secret weapon: my Mema’s mashed potatoes.

Here is what you need:

3 ½ lbs of russet potatoes

¼ cup of butter

4oz of cream cheese (or half a brick)

¼ cup of milk

½ – 1 tsp of Kosher salt (to taste)

dash of pepper

Instructions:

First peel and dice the potatoes, be careful peeling the potatoes with your fingers, we don’t want any bloody accidents on a holiday. Place the potatoes in a large saucepan and cover with cold water. Bring it to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until the potatoes are tender when poked with a fork.

Remove the potatoes from the heat and drain the water, letting the potatoes steam. In the same pot heat the milk, butter, and cream cheese until melted. Add potatoes, mash (if you have an electric mixer, use it. I used a fork and it took forever) and season. Never underestimate the power of a little salt and pepper! An electric mixer helps to blend all the ingredients. The picture you see is of my friend who decided these mashed potatoes were so good he ate them before they were even finished.
