Use greens for veggie lovers

Serves 1


2 slices of Ezekiel or whole grain bread

1 slice of Monterey Jack cheese

1/2 cup bell peppers, sliced

1/4 cup mushrooms, sliced

1/4 cup spinach

1 tablespoon canola or olive oil

1 tablespoon pesto sauce (optional)

Heat skillet over medium heat. Brush olive oil on one side of each slice of bread. Place cheese, peppers, mushrooms and spinach on not oiled side of bread. On other slice, spread pesto or any desired sauce. Place sauce-side down on top of the vegetables and place on heated skillet. Cook each side until golden brown.
