These recipes are so quick and delicious that you can make them right from your dorm as meals or a nice snack in between studying.

Vanilla Mug Cake


  • 1/4 cup + 2 tbsp all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup + 2 tbsp milk
  • 1 tsp vanilla bean paste
  • 1/2 tbsp vanilla extract
  • 2 tbsp butter, melted


1.  In a medium bowl, whisk together dry ingredients.

2.  In a measuring cup, whisk together milk, vanilla bean paste and vanilla extract.

3.  Make a well in the center of the dry ingredients then pour the milk mixture into the center, followed by the melted butter.

4.  Whisk until no lumps remain and batter is smooth and well combined.

5.  Pour into a 16-ounce microwave-safe mug.

6.  Microwave on high for 130 seconds or 2 minutes and 10 seconds.

7.  Carefully remove and enjoy!

Microwave Cheese Quesadillas 


  • 2 (10-inch) flour tortillas
  • 1 cup of shredded cheddar cheese


1.  Place flour tortilla on a large microwave-safe plate; sprinkle with shredded cheese. Place the second tortilla on top of the cheddar layer.

2.  Cook on high in the microwave until cheese is melted, about 1 minute.

  • 1 cup of tortilla chips

  • ¼ cup refrigerated taco sauce with seasoned ground beef (from 18-oz container)

  • ¼ cup shredded Mexican cheese blend (1 oz)

  • Nacho toppings (shredded lettuce, diced tomatoes, diced avocado, sliced ripe olives, sour cream and/or salsa)


  1. On microwavable heavy paper plate or a regular plate, arrange tortilla chips in a single layer. Top evenly with ground beef and cheese.

  2. Microwave uncovered on high 1 minute to 1 minute 15 seconds, rotating plate once, until thoroughly heated and cheese is melted. Top with desired nacho toppings.
